Ingredients:

  • 1 large cauliflower
  • 2–3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp cumin powder
  • ½ tsp chili flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley or cilantro for garnish
  • Optional: Parmesan cheese for topping

Instructions:

  1. Prepare the Cauliflower:
    • Preheat your oven to 400°F (200°C).
    • Remove the leaves and trim the stem of the cauliflower while keeping it intact.
    • Slice the cauliflower into 1-inch thick “steaks.” (You’ll get about 2–3 steaks from one cauliflower; use the smaller florets for roasting).
  2. Season the Steaks:
    • In a small bowl, mix olive oil, garlic powder, smoked paprika, cumin, salt, and pepper.
    • Brush this mixture generously on both sides of the cauliflower steaks.
  3. Roast or Grill:
    • Arrange the steaks on a baking sheet lined with parchment paper.
    • Roast in the oven for 20–25 minutes, flipping halfway through, until golden brown and tender.
    • Alternatively, grill the steaks on a preheated grill for 8–10 minutes on each side.
  4. Add Finishing Touches:
    • Sprinkle fresh parsley or cilantro before serving.
    • For an extra kick, add grated Parmesan or a squeeze of lemon juice.
