1 Minute Microwave Cheesecake

Ingredients:

  • 3 tbsp cream cheese (softened)
  • 2 tbsp sour cream
  • 1 tbsp powdered sweetener (like stevia, monk fruit, or erythritol)
  • 1/2 tsp vanilla extract
  • 1 tbsp almond flour (for crust texture, optional)
  • A pinch of salt

Instructions:

  1. Mix the filling: In a microwave-safe mug or bowl, combine the softened cream cheese, sour cream, sweetener, vanilla extract, and a pinch of salt. Stir well until smooth and creamy.
  2. Optional crust: If you want a simple crust-like texture, mix the almond flour into the filling. This will give it a slight base crunch when microwaved.
  3. Microwave: Microwave the mixture on high for 30-60 seconds, checking halfway through. The cheesecake should set and become firm around the edges, but still a little soft in the center.
  4. Cool and serve: Let it cool for a minute before serving. You can top it with berries or whipped cream for extra flavor.
