Ingredients:

- 2 tbsp sour cream
- 1 tbsp powdered sweetener (like stevia, monk fruit, or erythritol)
- 1/2 tsp vanilla extract
- 1 tbsp almond flour (for crust texture, optional)
- A pinch of salt
Instructions:
- Mix the filling: In a microwave-safe mug or bowl, combine the softened cream cheese, sour cream, sweetener, vanilla extract, and a pinch of salt. Stir well until smooth and creamy.
- Optional crust: If you want a simple crust-like texture, mix the almond flour into the filling. This will give it a slight base crunch when microwaved.
- Microwave: Microwave the mixture on high for 30-60 seconds, checking halfway through. The cheesecake should set and become firm around the edges, but still a little soft in the center.
