KETO CHEESEBURGER CASSEROLE

Ingredients:

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup mayonnaise
  • 1 tbsp mustard (Dijon or yellow)
  • 1/2 cup diced pickles (optional)
  • 2 tbsp butter or oil for cooking

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Beef Mixture:
    • In a skillet, heat butter or oil over medium heat.
    • Add the diced onion and garlic; sauté until softened.
    • Add the ground beef, breaking it up as it cooks.
    • Season with salt, pepper, and smoked paprika. Cook until browned, then remove from heat.
  3. Prepare Egg Mixture:
    • In a bowl, whisk together the eggs, heavy cream, mayonnaise, and mustard until smooth.
  4. Assemble Casserole:
    • In a greased casserole dish, spread the cooked beef mixture evenly.
    • If using pickles, sprinkle them over the beef.
    • Pour the egg mixture over the beef.
    • Sprinkle shredded cheddar cheese on top.
  5. Bake:
    • Place the casserole dish in the oven and bake for 20-25 minutes, or until the top is golden and the casserole is set.
  6. Serve and Enjoy:
    • Let it cool for a few minutes before serving.
    • Optional: Garnish with fresh parsley or more pickles for a burger-like vibe!
