keto Chicken bliss bombs!!

Ingredients:

  • 500g ground chicken
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 egg
  • 2 tbsp cream cheese (softened)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley (optional)
  • 2 tbsp olive oil or butter (for greasing or pan-frying)

Instructions:

  1. Preheat Oven (Optional):
    • If baking, preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the Mixture:
    • In a large mixing bowl, combine the ground chicken, mozzarella, Parmesan, almond flour, cream cheese, egg, garlic powder, onion powder, smoked paprika, salt, pepper, and parsley.
    • Mix until all ingredients are well incorporated.
  3. Shape the Bombs:
    • Scoop about 2 tablespoons of the mixture and roll it into small balls. Repeat until all the mixture is used.
  4. Cook the Bombs:
    • Option 1: Bake
      Place the chicken balls on the prepared baking sheet. Bake for 20-25 minutes or until golden brown and cooked through.
    • Option 2: Pan-Fry
      Heat olive oil or butter in a skillet over medium heat. Cook the chicken balls in batches, turning occasionally, for 8-10 minutes or until browned and fully cooked.
  5. Serve:
    • Let the bliss bombs cool slightly before serving. Pair with a dipping sauce like sugar-free ranch, garlic aioli, or marinara for extra flavor.

Tips:

  • Add finely chopped jalapeños or chili flakes for a spicy kick.
  • Serve as a snack, appetizer, or side dish with a fresh salad.
