Keto Pancakes
Ingredients:
- 2 large eggs
- 2 oz (60g) cream cheese (softened)
- 1/4 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp vanilla extract (optional)
- Pinch of salt
- Butter or oil for cooking
Instructions:
- Blend the Batter: In a blender or mixing bowl, combine eggs, cream cheese, almond flour, baking powder, vanilla extract, and salt. Blend until the mixture is smooth and lump-free.
- Heat the Pan: Heat a non-stick pan or skillet over medium heat and add a little butter or oil.
- Cook the Pancakes: Pour small amounts of batter (about 2–3 tablespoons per pancake) onto the pan. Cook for 2–3 minutes until bubbles form on the surface and the edges are set.
- Flip and Finish: Carefully flip the pancakes and cook for another 1–2 minutes until golden brown on both sides.
- Serve: Stack the pancakes and serve with sugar-free syrup, berries, or a dollop of whipped cream.
