Cheesy Meatloaf with Creamy Mashed Potatoes

Ingredients

For the Cheesy Meatloaf:

  • 1 lb (500g) ground beef
  • 1/2 lb (250g) ground pork (optional, for added flavor)
  • 1/2 cup breadcrumbs (or almond flour for keto)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup ketchup (or sugar-free ketchup for keto)
  • 2 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

For the Creamy Mashed Potatoes:

  • 2 lbs (1 kg) potatoes (or cauliflower for keto)
  • 4 tbsp butter
  • 1/4 cup heavy cream (or milk)
  • 1/4 cup sour cream (optional)
  • Salt and pepper to taste

Instructions

1. Prepare the Meatloaf:

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, cheddar cheese, Parmesan cheese, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix well until fully incorporated.
  3. Press the mixture into the prepared loaf pan and spread the ketchup evenly over the top.
  4. Bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C). Remove from the oven and let it rest for 10 minutes before slicing.

2. Make the Creamy Mashed Potatoes:

  1. Peel and chop the potatoes (or cauliflower) into chunks. Boil in salted water until tender (about 15 minutes).
  2. Drain the water and return the potatoes to the pot.
  3. Add butter, heavy cream, and sour cream. Mash until smooth and creamy. Season with salt and pepper to taste.

3. Serve:
Slice the cheesy meatloaf and serve alongside creamy mashed potatoes. Garnish with fresh parsley if desired.

Tips:

  • For extra flavor, add diced bell peppers or mushrooms to the meatloaf mixture.
  • If using cauliflower for the mash, steam instead of boiling to avoid a watery consistency.
