Cheesy Meatloaf with Creamy Mashed Potatoes
Ingredients
For the Cheesy Meatloaf:
- 1 lb (500g) ground beef
- 1/2 lb (250g) ground pork (optional, for added flavor)
- 1/2 cup breadcrumbs (or almond flour for keto)
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 cup onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup ketchup (or sugar-free ketchup for keto)
- 2 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
For the Creamy Mashed Potatoes:
- 2 lbs (1 kg) potatoes (or cauliflower for keto)
- 4 tbsp butter
- 1/4 cup heavy cream (or milk)
- 1/4 cup sour cream (optional)
- Salt and pepper to taste
Instructions
1. Prepare the Meatloaf:
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, combine the ground beef, ground pork, breadcrumbs, cheddar cheese, Parmesan cheese, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix well until fully incorporated.
- Press the mixture into the prepared loaf pan and spread the ketchup evenly over the top.
- Bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C). Remove from the oven and let it rest for 10 minutes before slicing.
2. Make the Creamy Mashed Potatoes:
- Peel and chop the potatoes (or cauliflower) into chunks. Boil in salted water until tender (about 15 minutes).
- Drain the water and return the potatoes to the pot.
- Add butter, heavy cream, and sour cream. Mash until smooth and creamy. Season with salt and pepper to taste.
3. Serve:
Slice the cheesy meatloaf and serve alongside creamy mashed potatoes. Garnish with fresh parsley if desired.
Tips:
- For extra flavor, add diced bell peppers or mushrooms to the meatloaf mixture.
- If using cauliflower for the mash, steam instead of boiling to avoid a watery consistency.
