Weight Watchers Chil

Ingredients:

  • 1 lb lean ground turkey or chicken
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1.5 cups low-sodium chicken or vegetable broth
  • 2 tsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Optional Toppings: Greek yogurt (as a sour cream substitute), fresh cilantro, diced avocado, lime wedges, or a sprinkle of low-fat cheese.


Instructions:

  1. Heat olive oil in a large pot over medium heat. Add diced onion and bell peppers, cooking until softened (about 5 minutes).
  2. Add ground turkey or chicken. Cook until browned, breaking it apart with a spoon.
  3. Stir in chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Cook for another 1-2 minutes.
  4. Add diced tomatoes, tomato paste, chicken broth, black beans, and kidney beans. Stir well to combine.
  5. Bring to a boil, then reduce heat to low. Simmer uncovered for 20-25 minutes, stirring occasionally, until the chili thickens.
  6. Adjust seasoning as needed and serve warm with your favorite toppings.
