Home Made chicken and broccoli casserole
Ingredients:
- 2 cups cooked chicken breast, shredded (rotisserie chicken works great)
- 4 cups broccoli florets, steamed until tender
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese (divided)
- 1/2 cup cream cheese, softened
- 1/2 cup heavy cream
- 1/4 cup sour cream
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional, for topping)
Instructions:
- Prepare and Preheat:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or casserole dish.
- Combine the Casserole Base:
- In a large mixing bowl, combine the shredded chicken, steamed broccoli, mozzarella cheese, and half of the cheddar cheese.
- Add the Toppings:
- Sprinkle the remaining cheddar cheese and Parmesan (if using) over the top of the casserole
- Make the Creamy Sauce:
- In a separate bowl, mix together the softened cream cheese, heavy cream, sour cream, garlic powder, onion powder, salt, and pepper. Stir until smooth and creamy.
- Assemble the Casserole:
- Pour the creamy sauce over the chicken and broccoli mixture. Stir everything together until the ingredients are evenly coated.
- Transfer the mixture to the prepared baking dish and spread it out evenly.
- Add the Toppings:
- Sprinkle the remaining cheddar cheese and Parmesan (if using) over the top of the casserole.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese on top is melted and golden.
- Serve:
- Let the casserole cool slightly before serving. Pair it with a simple side salad or roasted vegetables for a complete keto meal.
