Home Made chicken and broccoli casserole

Ingredients:

  • 2 cups cooked chicken breast, shredded (rotisserie chicken works great)
  • 4 cups broccoli florets, steamed until tender
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese (divided)
  • 1/2 cup cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup sour cream
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions:

  1. Prepare and Preheat:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or casserole dish.
  2. Combine the Casserole Base:
    • In a large mixing bowl, combine the shredded chicken, steamed broccoli, mozzarella cheese, and half of the cheddar cheese.
  3. Add the Toppings:
  4. Sprinkle the remaining cheddar cheese and Parmesan (if using) over the top of the casserole
  5. Make the Creamy Sauce:
    • In a separate bowl, mix together the softened cream cheese, heavy cream, sour cream, garlic powder, onion powder, salt, and pepper. Stir until smooth and creamy.
  6. Assemble the Casserole:
    • Pour the creamy sauce over the chicken and broccoli mixture. Stir everything together until the ingredients are evenly coated.
    • Transfer the mixture to the prepared baking dish and spread it out evenly.
  7. Add the Toppings:
    • Sprinkle the remaining cheddar cheese and Parmesan (if using) over the top of the casserole.
  8. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese on top is melted and golden.
  9. Serve:
    • Let the casserole cool slightly before serving. Pair it with a simple side salad or roasted vegetables for a complete keto meal.
