HOMEMADE KETO BOUNTY BARS
Ingredients:
- 2 cups shredded unsweetened coconut
- 1/2 cup coconut cream
- 1/4 cup coconut oil (melted)
- 1/4 cup powdered erythritol (or your preferred keto sweetener)
- 1/2 tsp vanilla extract
- 1/2 cup sugar-free dark chocolate chips
- 1 tbsp coconut oil (for chocolate coating)
Instructions:
- Prepare the Coconut Filling
- In a mixing bowl, combine shredded coconut, coconut cream, melted coconut oil, powdered sweetener, and vanilla extract. Mix well until fully combined.
- The mixture should hold its shape when pressed together. If it’s too dry, add a little more coconut cream.
- Shape the Bars
- Line a tray with parchment paper.
- Scoop out portions of the coconut mixture and shape them into small rectangular bars. Place them on the tray.
- Refrigerate the bars for 1-2 hours until firm.
- Prepare the Chocolate Coating
- Melt the sugar-free dark chocolate chips with 1 tablespoon of coconut oil in a microwave or double boiler until smooth.
- Coat the Bars
- Dip each coconut bar into the melted chocolate, ensuring it’s fully coated. Use a fork to lift the bar out, letting excess chocolate drip off.
- Place the coated bars back on the parchment-lined tray.
- Set the Chocolate
- Refrigerate the coated bars for about 30 minutes or until the chocolate hardens.
- Serve and Enjoy
- Your homemade keto bounty bars are ready! Store them in an airtight container in the refrigerator for up to a week.
