HOMEMADE KETO BOUNTY BARS

Ingredients:

  • 2 cups shredded unsweetened coconut
  • 1/2 cup coconut cream
  • 1/4 cup coconut oil (melted)
  • 1/4 cup powdered erythritol (or your preferred keto sweetener)
  • 1/2 tsp vanilla extract
  • 1/2 cup sugar-free dark chocolate chips
  • 1 tbsp coconut oil (for chocolate coating)

Instructions:

  1. Prepare the Coconut Filling
    • In a mixing bowl, combine shredded coconut, coconut cream, melted coconut oil, powdered sweetener, and vanilla extract. Mix well until fully combined.
    • The mixture should hold its shape when pressed together. If it’s too dry, add a little more coconut cream.
  2. Shape the Bars
    • Line a tray with parchment paper.
    • Scoop out portions of the coconut mixture and shape them into small rectangular bars. Place them on the tray.
    • Refrigerate the bars for 1-2 hours until firm.
  3. Prepare the Chocolate Coating
    • Melt the sugar-free dark chocolate chips with 1 tablespoon of coconut oil in a microwave or double boiler until smooth.
  4. Coat the Bars
    • Dip each coconut bar into the melted chocolate, ensuring it’s fully coated. Use a fork to lift the bar out, letting excess chocolate drip off.
    • Place the coated bars back on the parchment-lined tray.
  5. Set the Chocolate
    • Refrigerate the coated bars for about 30 minutes or until the chocolate hardens.
  6. Serve and Enjoy
    • Your homemade keto bounty bars are ready! Store them in an airtight container in the refrigerator for up to a week.
