Keto Apple Fritters

Ingredients

  • 1 medium-sized zucchini (peeled and diced to resemble apple chunks)
  • 2 tbsp lemon juice
  • 2 tbsp unsalted butter
  • 2 tbsp erythritol or keto-friendly sweetener
  • 1/2 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 tsp baking powder
  • 1/4 cup unsweetened almond milk
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • Coconut oil for frying

Instructions

  1. Prepare the “Apple” Filling:
    • In a pan, melt butter over medium heat.
    • Add diced zucchini, lemon juice, erythritol, cinnamon, and nutmeg.
    • Cook for 5–7 minutes, stirring occasionally, until zucchini softens and resembles caramelized apple chunks. Remove from heat and let it cool.
  2. Prepare the Batter:
    • In a bowl, mix almond flour, coconut flour, and baking powder.
    • In another bowl, whisk together eggs, almond milk, and vanilla extract.
    • Combine the wet and dry ingredients, mixing well to form a thick batter.
  3. Combine and Fry:
    • Fold the cooled “apple” filling into the batter.
    • Heat coconut oil in a frying pan over medium heat.
    • Scoop spoonfuls of batter into the hot oil, flattening slightly to form fritters.
    • Fry until golden brown on both sides, about 2–3 minutes per side.
  4. Serve:
    • Drain fritters on a paper towel.
    • Optionally dust with powdered erythritol or drizzle with a sugar-free glaze.
