Keto Apple Fritters
Ingredients
- 1 medium-sized zucchini (peeled and diced to resemble apple chunks)
- 2 tbsp lemon juice
- 2 tbsp unsalted butter
- 2 tbsp erythritol or keto-friendly sweetener
- 1/2 tsp cinnamon powder
- 1/4 tsp nutmeg powder
- 1 cup almond flour
- 1/4 cup coconut flour
- 2 tsp baking powder
- 1/4 cup unsweetened almond milk
- 2 large eggs
- 1/2 tsp vanilla extract
- Coconut oil for frying
Instructions
- Prepare the “Apple” Filling:
- In a pan, melt butter over medium heat.
- Add diced zucchini, lemon juice, erythritol, cinnamon, and nutmeg.
- Cook for 5–7 minutes, stirring occasionally, until zucchini softens and resembles caramelized apple chunks. Remove from heat and let it cool.
- Prepare the Batter:
- In a bowl, mix almond flour, coconut flour, and baking powder.
- In another bowl, whisk together eggs, almond milk, and vanilla extract.
- Combine the wet and dry ingredients, mixing well to form a thick batter.
- Combine and Fry:
- Fold the cooled “apple” filling into the batter.
- Heat coconut oil in a frying pan over medium heat.
- Scoop spoonfuls of batter into the hot oil, flattening slightly to form fritters.
- Fry until golden brown on both sides, about 2–3 minutes per side.
- Serve:
- Drain fritters on a paper towel.
- Optionally dust with powdered erythritol or drizzle with a sugar-free glaze.
