Keto Breakfast Casserole
Ingredients:
- 8 large eggs
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese (or your favorite keto-friendly cheese)
- 1/2 cup cooked bacon or sausage (crumbled)
- 1/2 cup diced bell peppers (optional, for flavor and color)
- 1/2 cup chopped spinach (optional)
- 1/4 cup diced onion (optional)
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp butter (for greasing the pan)
Instructions:
- Preheat the oven to 375°F (190°C). Grease a baking dish with butter or non-stick spray.
- Cook the meat: If not already cooked, sauté the bacon or sausage until browned. Set aside.
- Whisk the eggs: In a large bowl, whisk the eggs and heavy cream together. Season with salt, pepper, garlic powder, and paprika.
- Add the fillings: Stir in the cheese, cooked meat, and optional veggies like bell peppers, onions, and spinach. Mix well.
- Pour into the dish: Pour the mixture evenly into the greased baking dish.
- Bake: Place in the preheated oven and bake for 25-30 minutes, or until the top is golden and the casserole is firm to the touch.
- Cool and serve: Let it cool slightly before slicing into squares. Enjoy!
