Keto Fluffy Skillet Buns

Ingredients:

  • 1 ½ cups almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 2 tbsp melted butter (for brushing)
  • Optional: Garlic powder or herbs for extra flavor

Instructions:

  1. Preheat Skillet: Place a cast-iron skillet on medium heat and lightly grease it with butter or olive oil.
  2. Melt Cheeses: In a microwave-safe bowl, melt the mozzarella and cream cheese together (about 30-60 seconds). Stir until smooth.
  3. Mix Dry Ingredients: In a separate bowl, mix almond flour, coconut flour, baking powder, and salt.
  4. Combine Wet and Dry: Add the melted cheese mixture to the dry ingredients, followed by the eggs. Mix well until a sticky dough forms.
  5. Shape the Buns: Divide the dough into equal portions and roll them into balls. Flatten slightly and place them directly into the preheated skillet.
  6. Cook: Cover the skillet with a lid and cook on low heat for about 8-10 minutes on each side, or until the buns are golden brown and cooked through.
  7. Brush with Butter: Once cooked, brush the tops of the buns with melted butter. Sprinkle optional garlic powder or herbs for added flavor.
  8. Serve: Enjoy warm as a side for soups, salads, or as a sandwich base.
