Keto Fluffy Skillet Buns
Ingredients:
- 1 ½ cups almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder
- ½ tsp salt
- 3 large eggs
- 1 cup shredded mozzarella cheese
- 2 tbsp cream cheese
- 2 tbsp melted butter (for brushing)
- Optional: Garlic powder or herbs for extra flavor
Instructions:
- Preheat Skillet: Place a cast-iron skillet on medium heat and lightly grease it with butter or olive oil.
- Melt Cheeses: In a microwave-safe bowl, melt the mozzarella and cream cheese together (about 30-60 seconds). Stir until smooth.
- Mix Dry Ingredients: In a separate bowl, mix almond flour, coconut flour, baking powder, and salt.
- Combine Wet and Dry: Add the melted cheese mixture to the dry ingredients, followed by the eggs. Mix well until a sticky dough forms.
- Shape the Buns: Divide the dough into equal portions and roll them into balls. Flatten slightly and place them directly into the preheated skillet.
- Cook: Cover the skillet with a lid and cook on low heat for about 8-10 minutes on each side, or until the buns are golden brown and cooked through.
- Brush with Butter: Once cooked, brush the tops of the buns with melted butter. Sprinkle optional garlic powder or herbs for added flavor.
- Serve: Enjoy warm as a side for soups, salads, or as a sandwich base.
