Cheesy Keto Taco Soup

Ingredients:

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (optional)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 1 can (4 oz) diced green chilies
  • 1 cup beef or chicken broth (low-sodium)
  • 1 package (1 oz) taco seasoning (or homemade seasoning)
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1 cup shredded mozzarella cheese (optional, for extra cheesiness)
  • 1/4 cup sour cream (optional, for topping)
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions:

  1. Cook the Ground Meat:
    • In a large pot or Dutch oven, brown the ground beef (or turkey/chicken) over medium heat until fully cooked. Drain excess fat if necessary.
  2. Sauté the Vegetables:
    • Add the chopped onion, bell pepper (if using), and minced garlic to the meat. Cook for about 3-4 minutes until softened.
  3. Add the Broth and Tomatoes:
    • Stir in the diced tomatoes, green chilies, and broth. Bring to a simmer.
  4. Season the Soup:
    • Add the taco seasoning, salt, and pepper. Stir to combine and let the soup simmer for 10 minutes, allowing the flavors to meld together.
  5. Add the Cream and Cheese:
    • Lower the heat and stir in the heavy cream. Add the shredded cheddar cheese and mozzarella (if using). Stir until the cheese is melted and the soup is creamy.
  6. Final Touches:
    • Taste and adjust seasoning as needed (add more salt, pepper, or taco seasoning if desired).
    • Serve hot, topped with extra cheese, sour cream, and fresh cilantro.
