Cheesy Keto Taco Soup
Ingredients:
- 1 lb ground beef (or ground turkey/chicken)
- 1 medium onion, chopped
- 1 bell pepper, chopped (optional)
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (no sugar added)
- 1 can (4 oz) diced green chilies
- 1 cup beef or chicken broth (low-sodium)
- 1 package (1 oz) taco seasoning (or homemade seasoning)
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese (plus more for topping)
- 1 cup shredded mozzarella cheese (optional, for extra cheesiness)
- 1/4 cup sour cream (optional, for topping)
- Salt and pepper to taste
- Fresh cilantro (optional, for garnish)
Instructions:
- Cook the Ground Meat:
- In a large pot or Dutch oven, brown the ground beef (or turkey/chicken) over medium heat until fully cooked. Drain excess fat if necessary.
- Sauté the Vegetables:
- Add the chopped onion, bell pepper (if using), and minced garlic to the meat. Cook for about 3-4 minutes until softened.
- Add the Broth and Tomatoes:
- Stir in the diced tomatoes, green chilies, and broth. Bring to a simmer.
- Season the Soup:
- Add the taco seasoning, salt, and pepper. Stir to combine and let the soup simmer for 10 minutes, allowing the flavors to meld together.
- Add the Cream and Cheese:
- Lower the heat and stir in the heavy cream. Add the shredded cheddar cheese and mozzarella (if using). Stir until the cheese is melted and the soup is creamy.
- Final Touches:
- Taste and adjust seasoning as needed (add more salt, pepper, or taco seasoning if desired).
- Serve hot, topped with extra cheese, sour cream, and fresh cilantro.
