Grilled Chicken salad
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 4 cups mixed salad greens (e.g., spinach, arugula, and romaine)
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese (optional)
- 1/4 cup olives (optional)
- 2 tbsp balsamic vinaigrette (or dressing of choice)
Instructions:
- Marinate the chicken:
- In a small bowl, mix olive oil, garlic powder, paprika, oregano, salt, and pepper.
- Coat the chicken breasts with the marinade and let it sit for 15-20 minutes.
- Grill the chicken:
- Preheat the grill or a grill pan over medium-high heat.
- Grill the chicken for 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F/75°C).
- Once cooked, let the chicken rest for 5 minutes before slicing it into thin strips.
- Prepare the salad:
- In a large salad bowl, combine the salad greens, cucumber slices, cherry tomatoes, red onion, feta cheese, and olives.
- Assemble the salad:
- Add the sliced grilled chicken on top of the salad.
- Drizzle with balsamic vinaigrette or your favorite dressing.
- Serve:
- Toss everything together gently, and serve immediately!
