Home Made Keto Mix Salad
Ingredients:
- Mixed Greens (spinach, arugula, lettuce) – 2 cups
- Cucumber – 1, sliced
- Cherry Tomatoes – 1/2 cup, halved
- Avocado – 1, diced
- Olives – 1/4 cup (green or black)
- Red Onion – 1/4, thinly sliced
- Cheese (feta, goat, or parmesan) – 1/4 cup, crumbled or grated
- Chia Seeds or Pumpkin Seeds – 1 tbsp (optional)
- Grilled Chicken or Tofu – 1/2 cup (optional for added protein)
Dressing:
- Olive Oil – 2 tbsp
- Apple Cider Vinegar – 1 tbsp
- Lemon Juice – 1 tbsp
- Mustard – 1 tsp (optional)
- Garlic Powder – 1/2 tsp
- Salt & Pepper – to taste
Instructions:
- Prepare the Salad Base: In a large bowl, combine the mixed greens, cucumber, cherry tomatoes, avocado, olives, and red onion.
- Add Protein (Optional): For a more filling meal, top the salad with grilled chicken or tofu.
- Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, mustard, garlic powder, salt, and pepper until well combined.
- Toss the Salad: Pour the dressing over the salad and toss gently to coat all the ingredients.
- Top with Cheese & Seeds: Sprinkle the crumbled cheese and seeds on top for added texture and flavor.
- Serve & Enjoy: Serve immediately for the freshest taste!
