Keto Carrot Cake Roll

Ingredients:

  • For the cake:
    • 4 large eggs
    • 1/2 cup almond flour
    • 1/4 cup coconut flour
    • 1/2 cup erythritol (or any keto-friendly sweetener)
    • 1/2 teaspoon baking powder
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground ginger
    • 1/2 cup finely grated carrots
    • 1/4 cup melted coconut oil (or butter)
    • 1 teaspoon vanilla extract
    • Pinch of salt
  • For the cream cheese filling:
    • 8 oz cream cheese, softened
    • 1/4 cup powdered erythritol (or other sweetener)
    • 1/2 teaspoon vanilla extract
    • Pinch of salt

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking sheet with parchment paper.
  2. Make the Cake:
    • In a mixing bowl, beat the eggs and sweetener together until light and fluffy.
    • Add the melted coconut oil and vanilla extract, then mix until combined.
    • In a separate bowl, combine almond flour, coconut flour, baking powder, cinnamon, nutmeg, ginger, and salt.
    • Gradually fold the dry ingredients into the wet ingredients, mixing until smooth.
    • Stir in the grated carrots.
  3. Bake the Cake:
    • Pour the cake batter onto the prepared baking sheet and spread it evenly.
    • Bake for 10–12 minutes, or until the cake is firm to the touch and lightly golden.
  4. Roll the Cake:
    • Remove the cake from the oven and allow it to cool for 5 minutes.
    • Lay a clean kitchen towel on a flat surface and sprinkle with a little powdered erythritol.
    • Once the cake is slightly cooled, invert it onto the towel. Gently peel off the parchment paper.
    • Roll the cake up with the towel inside, and let it cool completely.
  5. Prepare the Cream Cheese Filling:
    • While the cake is cooling, beat the softened cream cheese, powdered erythritol, vanilla extract, and salt together until smooth and fluffy.
  6. Assemble the Cake Roll:
    • Once the cake has cooled, unroll it carefully.
    • Spread the cream cheese filling evenly over the entire surface of the cake.
    • Gently roll the cake back up without the towel.
  7. Serve:
    • Slice the cake roll into pieces and serve. You can garnish with a sprinkle of cinnamon or a few extra grated carrots for decoration.
