WW Baked Apple Fritters
Ingredients:
- 2 medium apples, peeled, cored, and chopped
- 1 cup all-purpose flour (or whole wheat flour for a healthier option)
- 1/2 cup granulated sweetener (like Stevia or Monk Fruit, depending on your preference)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup non-fat Greek yogurt
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened applesauce
- Cooking spray (for greasing the muffin tin)
Instructions:
- Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or use muffin liners.
- Prepare the apples: Peel, core, and chop the apples into small pieces. Set aside.
- Mix the dry ingredients: In a large bowl, combine the flour, sweetener, cinnamon, nutmeg, baking powder, baking soda, and salt. Stir until well mixed.
- Combine the wet ingredients: In another bowl, whisk together the Greek yogurt, egg, vanilla extract, and applesauce until smooth.
- Combine wet and dry ingredients: Add the wet mixture to the dry ingredients and stir gently until just combined. Be careful not to overmix.
- Fold in the apples: Gently fold the chopped apples into the batter, ensuring they are evenly distributed.
- Fill the muffin tin: Spoon the batter evenly into the muffin tin, filling each cup about 3/4 full.
- Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
- Cool and serve: Let the fritters cool for a few minutes before removing them from the tin. Serve warm or at room temperature.
Optional Glaze:

- Mix 1/4 cup powdered sweetener (like Stevia or Monk Fruit) with 1-2 teaspoons of milk (or almond milk) until smooth.
- Drizzle the glaze over the cooled fritters for an extra touch of sweetness.
