Ingredients:

• ½ cup unsalted butter, softened

• 2 large eggs

• ½ cup sour cream
• 1 cup fresh pineapple chunks
• ¼ cup powdered sugar
• 2 tbsp pineapple juice
Instructions:
Preheat Oven: Preheat oven to 350°F (175°C) and grease a loaf pan with butter and flour.
Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
Cream Butter and Sugar: In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla extract.
Combine Ingredients: Gradually mix in the dry ingredients, alternating with sour cream. Fold in the pineapple chunks gently.
Bake: Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
Cool and Glaze: Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack. In a small bowl, whisk powdered sugar and pineapple juice to make a glaze. Drizzle over the cooled cake.
