Ingredients:
For the Wings:
- 2 pounds (1 kg) chicken wings (drums and flats)
- 1 tbsp baking powder (not baking soda)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
For the Buffalo Sauce:
- ⅓ cup hot sauce (like Frank’s RedHot)
- 3 tbsp unsalted butter
- 1 tbsp honey (optional for sweetness)
- 1 tsp garlic powder
Instructions:
- Prepare the Wings:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with foil and place a wire rack on top. Spray the rack lightly with cooking spray.
- Pat the wings dry with paper towels to remove excess moisture. This ensures crispiness.
- In a large bowl, toss the wings with baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
- Bake the Wings:
- Arrange the wings in a single layer on the prepared rack, ensuring they don’t touch each other.
- Bake for 40-50 minutes, flipping halfway through, until the wings are golden brown and crispy.
- Make the Buffalo Sauce:
- In a small saucepan, melt the butter over low heat.
- Stir in the hot sauce, garlic powder, and honey (if using). Mix until well combined and warm. Remove from heat.
- Coat the Wings:
- Once the wings are done, transfer them to a large bowl.
- Pour the Buffalo sauce over the wings and toss until they are fully coated.
- Serve:
- Serve immediately with celery sticks and blue cheese or ranch dressing on the side.
