Ingredients:

For the Wings:

  • 2 pounds (1 kg) chicken wings (drums and flats)
  • 1 tbsp baking powder (not baking soda)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

For the Buffalo Sauce:

  • ⅓ cup hot sauce (like Frank’s RedHot)
  • 3 tbsp unsalted butter
  • 1 tbsp honey (optional for sweetness)
  • 1 tsp garlic powder

Instructions:

  1. Prepare the Wings:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with foil and place a wire rack on top. Spray the rack lightly with cooking spray.
    • Pat the wings dry with paper towels to remove excess moisture. This ensures crispiness.
    • In a large bowl, toss the wings with baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  2. Bake the Wings:
    • Arrange the wings in a single layer on the prepared rack, ensuring they don’t touch each other.
    • Bake for 40-50 minutes, flipping halfway through, until the wings are golden brown and crispy.
  3. Make the Buffalo Sauce:
    • In a small saucepan, melt the butter over low heat.
    • Stir in the hot sauce, garlic powder, and honey (if using). Mix until well combined and warm. Remove from heat.
  4. Coat the Wings:
    • Once the wings are done, transfer them to a large bowl.
    • Pour the Buffalo sauce over the wings and toss until they are fully coated.
  5. Serve:
    • Serve immediately with celery sticks and blue cheese or ranch dressing on the side.
