Shrimp Scampi
Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup chicken or vegetable broth
- 1/4 cup fresh lemon juice (about 1 lemon)
- 1/4 tsp red pepper flakes (optional, for a kick)
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- Zucchini noodles (zoodles) or shirataki noodles, as needed
Instructions:
- Prepare Shrimp: Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
- Cook Shrimp: Heat 2 tbsp butter and 1 tbsp olive oil in a large skillet over medium heat. Add shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp and set aside.
- Make the Sauce: In the same skillet, add the remaining butter and olive oil. Add minced garlic and cook until fragrant (about 30 seconds).
- Add Liquids: Stir in broth and lemon juice. Let it simmer for 2-3 minutes to reduce slightly. Add red pepper flakes if desired.
- Combine: Return the shrimp to the skillet. Toss to coat in the sauce and heat through (about 1 minute).
- Serve: Place the shrimp and sauce over a bed of zoodles or shirataki noodles. Sprinkle with fresh parsley and serve immediately.
