Shrimp Scampi

Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup chicken or vegetable broth
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 1/4 tsp red pepper flakes (optional, for a kick)
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste
  • Zucchini noodles (zoodles) or shirataki noodles, as needed

Instructions:

  1. Prepare Shrimp: Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
  2. Cook Shrimp: Heat 2 tbsp butter and 1 tbsp olive oil in a large skillet over medium heat. Add shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp and set aside.
  3. Make the Sauce: In the same skillet, add the remaining butter and olive oil. Add minced garlic and cook until fragrant (about 30 seconds).
  4. Add Liquids: Stir in broth and lemon juice. Let it simmer for 2-3 minutes to reduce slightly. Add red pepper flakes if desired.
  5. Combine: Return the shrimp to the skillet. Toss to coat in the sauce and heat through (about 1 minute).
  6. Serve: Place the shrimp and sauce over a bed of zoodles or shirataki noodles. Sprinkle with fresh parsley and serve immediately.
