Keto Cream Puffs make recipe

Ingredients

For the Puff Pastry

  • 1 cup mozzarella cheese, shredded
  • 2 tbsp cream cheese
  • 1 large egg
  • 1/2 cup almond flour
  • 1/2 tsp baking powder

For the Cream Filling

  • 1 cup heavy whipping cream
  • 2 tbsp powdered erythritol (or any keto-friendly sweetener)
  • 1/2 tsp vanilla extract

Instructions

Step 1: Make the Puff Pastry

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt the mozzarella and cream cheese together for about 1 minute. Stir well until smooth.
  3. Add almond flour, baking powder, and egg to the melted cheese. Mix thoroughly until a dough forms.
  4. Divide the dough into small portions and roll into balls. Flatten slightly and place them on the prepared baking sheet.
  5. Bake for 12-15 minutes, or until the puffs are golden brown. Let them cool completely before filling.

Step 2: Make the Cream Filling

  1. In a chilled bowl, beat the heavy whipping cream, powdered erythritol, and vanilla extract until stiff peaks form.
  2. Transfer the cream to a piping bag (or use a spoon).

Step 3: Assemble the Cream Puffs

  1. Cut the baked puffs in half horizontally.
  2. Pipe or spoon the whipped cream into the center of each puff and replace the top.
  3. Dust lightly with more powdered sweetener, if desired.

Tips

  • Serve immediately or store in the fridge for up to 2 days.
  • Add a touch of cocoa powder to the filling for a chocolate twist!
