Keto Philly Cheesesteak Meatloaf
Ingredients
- 1 ½ lbs ground beef (80/20)
- 1 cup bell peppers (green, red, or yellow, finely chopped)
- 1 medium onion (finely chopped)
- 1 cup mushrooms (finely chopped, optional)
- 2 cloves garlic (minced)
- 1 egg
- 1 cup shredded mozzarella or provolone cheese
- ½ cup almond flour (or pork rind crumbs)
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- ½ tsp Italian seasoning
- 4 oz cream cheese (softened)
- 6-8 slices provolone cheese (for topping)
Instructions
- Preheat the Oven
Preheat your oven to 375°F (190°C) and grease a loaf pan or line it with parchment paper. - Sauté the Vegetables
In a skillet over medium heat, sauté the chopped bell peppers, onions, and mushrooms until soft. Add minced garlic and cook for another minute. Set aside to cool slightly. - Mix the Meatloaf
In a large mixing bowl, combine the ground beef, sautéed vegetables, almond flour (or pork rind crumbs), egg, Worcestershire sauce, cream cheese, salt, pepper, paprika, and Italian seasoning. Mix everything together until well combined. - Layer the Cheese
Place half of the meat mixture in the prepared loaf pan. Spread a layer of shredded mozzarella or provolone cheese on top. Cover with the remaining meat mixture and press it down firmly. - Bake the Meatloaf
Bake in the preheated oven for 45-50 minutes or until the meatloaf is cooked through (internal temperature of 160°F/71°C). - Top with Provolone Cheese
Remove the meatloaf from the oven and lay slices of provolone cheese on top. Return to the oven for another 5-7 minutes, or until the cheese melts and bubbles. - Rest and Serve
Allow the meatloaf to rest for 5-10 minutes before slicing.
