Keto Reuben Bowls

Ingredients:

  • 1 lb corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 1/2 cup shredded Swiss cheese
  • 2 tbsp mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp sugar-free ketchup
  • 1 tbsp pickle relish (optional)
  • 1 small cucumber, thinly sliced
  • 1 tbsp olive oil or butter
  • 2 cups mixed greens (optional)

Instructions:

  1. Prepare the Dressing:
    • In a small bowl, mix the mayonnaise, Dijon mustard, sugar-free ketchup, and pickle relish (if using). Set aside.
  2. Cook the Corned Beef:
    • Heat olive oil or butter in a large skillet over medium heat. Add the thinly sliced corned beef and cook until crispy and heated through, about 5-7 minutes. Set aside.
  3. Assemble the Bowl:
    • If using mixed greens, start by adding a base of greens in a bowl. Top with the cooked corned beef, sauerkraut, and cucumber slices.
  4. Add Cheese:
    • Sprinkle shredded Swiss cheese over the top. You can optionally melt the cheese by placing the bowl under a broiler for a minute or so.
  5. Drizzle the Dressing:
    • Drizzle the prepared dressing over the entire bowl, ensuring every ingredient is coated.
  6. Serve & Enjoy:
    • Serve immediately, enjoy the rich flavors of your keto Reuben bowl!
