Keto Reuben Bowls
Ingredients:
- 1 lb corned beef, thinly sliced
- 1 cup sauerkraut, drained
- 1/2 cup shredded Swiss cheese
- 2 tbsp mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp sugar-free ketchup
- 1 tbsp pickle relish (optional)
- 1 small cucumber, thinly sliced
- 1 tbsp olive oil or butter
- 2 cups mixed greens (optional)
Instructions:
- Prepare the Dressing:
- In a small bowl, mix the mayonnaise, Dijon mustard, sugar-free ketchup, and pickle relish (if using). Set aside.
- Cook the Corned Beef:
- Heat olive oil or butter in a large skillet over medium heat. Add the thinly sliced corned beef and cook until crispy and heated through, about 5-7 minutes. Set aside.
- Assemble the Bowl:
- If using mixed greens, start by adding a base of greens in a bowl. Top with the cooked corned beef, sauerkraut, and cucumber slices.
- Add Cheese:
- Sprinkle shredded Swiss cheese over the top. You can optionally melt the cheese by placing the bowl under a broiler for a minute or so.
- Drizzle the Dressing:
- Drizzle the prepared dressing over the entire bowl, ensuring every ingredient is coated.
- Serve & Enjoy:
