Ingredients:

  • 1-2 tbsp sweetener (like stevia or monk fruit, adjust to taste)
  • 2 tbsp water or unsweetened almond milk
  • 1/2 tsp vanilla extract (optional)

Instructions:

  1. In a microwave-safe mug, whisk together the cocoa powder, almond flour, baking powder, and sweetener.
  2. Add the egg (or egg white), applesauce (if using), water or almond milk, and vanilla extract. Stir until everything is well combined.
  3. Microwave on high for 1 minute to 1 minute 30 seconds. Start checking after 1 minute, as microwave times may vary.
  4. Let the mug cake cool slightly before enjoying.

  • A dollop of fat-free whipped cream (if points allow)
  • Fresh berries or a sprinkle of cinnamon for extra flavor
