Ingredients:
- 2 tbsp cocoa powder (unsweetened)
- 1 tbsp almond flour
- 1/4 tsp baking powder
- 1 tbsp unsweetened applesauce (optional for moisture)
- 1 egg (or egg white for even fewer points)
- 1-2 tbsp sweetener (like stevia or monk fruit, adjust to taste)
- 2 tbsp water or unsweetened almond milk
- 1/2 tsp vanilla extract (optional)
Instructions:
- In a microwave-safe mug, whisk together the cocoa powder, almond flour, baking powder, and sweetener.
- Add the egg (or egg white), applesauce (if using), water or almond milk, and vanilla extract. Stir until everything is well combined.
- Microwave on high for 1 minute to 1 minute 30 seconds. Start checking after 1 minute, as microwave times may vary.
- Let the mug cake cool slightly before enjoying.
Optional Toppings:
- A dollop of fat-free whipped cream (if points allow)
- Fresh berries or a sprinkle of cinnamon for extra flavor
