Ingredients

  • 2 large cucumbers (thinly sliced)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh dill (chopped)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (or lemon juice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/4 teaspoon garlic powder or minced fresh garlic

Instructions

  1. Wash the cucumbers thoroughly. Slice them thinly using a knife or mandoline for uniform pieces.
  2. Place the sliced cucumbers in a large bowl.
  3. Add thinly sliced red onion and chopped fresh dill.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, salt, black pepper, and garlic (if using).
  5. Pour the dressing over the cucumber mixture and toss until everything is well coated.
  6. Taste and adjust seasoning if needed.
  7. Chill in the refrigerator for at least 15-20 minutes before serving for better flavor.

Tips

  • Use English cucumbers for a milder flavor or Persian cucumbers for extra crunch.
  • Add a bit of feta cheese or sliced cherry tomatoes for variety.
  • Sprinkle some sesame seeds or pumpkin seeds for added texture.
