Weight Watcher Brownies

Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain non-fat Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sweetener (like Stevia or monk fruit)
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup whole wheat flour (or almond flour for lower carbs)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup mini dark chocolate chips (optional, for extra indulgence)

Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch square baking pan with parchment paper.
  2. Mix the Wet Ingredients
    In a large mixing bowl, whisk together the applesauce, Greek yogurt, eggs, vanilla extract, and sweetener until smooth.
  3. Combine Dry Ingredients
    In a separate bowl, whisk together the cocoa powder, flour, baking powder, and salt.
  4. Blend and Fold
    Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix. If using chocolate chips, fold them into the batter.
  5. Bake
    Pour the batter into the prepared baking pan and spread it evenly. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve
    Allow the brownies to cool in the pan before slicing into 16 small squares for portion control.
