Air fryer veggies and sausage

I have a small air fryer since I’m cooking for just me – I believe it is either 2 1/2 or 3 quarts. to use up small amounts of leftover produce, I cut up three small potatoes into bite size chunks, and added six or seven baby carrots. I tossed those with a little bit of olive oil, pepper, and a touch of leftover taco seasoning. I put those into my preheated air fryer, and turned it to roast (I believe that is 380°F/190C, and my air fryer does not have an actual air fry setting). I let those cook while I chopped about a quarter each of red and green bell peppers, and also toss those in a little bit of oil, some pepper, and a dash of curry. At about the five minute mark for the potatoes and carrots, I shook the basket and added the peppers and cooked for about another eight minutes, shaking once in between. Then I added the sliced pre-cooked sausage, shook it all together, and cooked for another 6 to 8 minutes, testing for doneness of the potatoes and carrots.

This made a large meal for me, although I did eat it all 😉; if I do something similar, next time I will omit a potato and one or two carrots
