Baked Sweet and Sour Chicken

Ingredients

For the Chicken:

  • 2-3 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cornstarch (or arrowroot powder for keto)
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • 1/4 cup olive oil (or your preferred oil for baking)

For the Sweet and Sour Sauce:

  • 1/2 cup apple cider vinegar
  • 1/3 cup honey (for keto, use a sugar-free sweetener like erythritol)
  • 1/3 cup ketchup (sugar-free for keto)
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon garlic powder
  • 1 teaspoon grated ginger (optional)

Instructions

1. Prepare the Chicken:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken pieces with salt and pepper.
  3. Place the cornstarch in one bowl and the beaten eggs in another.
  4. Dip each piece of chicken into the cornstarch first, then into the egg, coating evenly.
  5. Heat a large skillet over medium heat with olive oil. Lightly brown the chicken for about 2 minutes on each side (it does not need to be fully cooked).

2. Bake the Chicken:

  1. Place the browned chicken pieces in a greased 9×13-inch baking dish.

3. Make the Sweet and Sour Sauce:

  1. In a bowl, whisk together apple cider vinegar, honey (or sweetener), ketchup, soy sauce, garlic powder, and ginger.
  2. Pour the sauce evenly over the chicken in the baking dish.

4. Bake:

  1. Bake the chicken uncovered for 45-50 minutes.
  2. Stir the chicken every 15 minutes to coat it well with the sauce.
