Baked Sweet and Sour Chicken
Ingredients
For the Chicken:
- 2-3 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cornstarch (or arrowroot powder for keto)
- 2 large eggs, beaten
- Salt and pepper to taste
- 1/4 cup olive oil (or your preferred oil for baking)
For the Sweet and Sour Sauce:
- 1/2 cup apple cider vinegar
- 1/3 cup honey (for keto, use a sugar-free sweetener like erythritol)
- 1/3 cup ketchup (sugar-free for keto)
- 1 tablespoon soy sauce or tamari
- 1 teaspoon garlic powder
- 1 teaspoon grated ginger (optional)
Instructions
1. Prepare the Chicken:
- Preheat your oven to 375°F (190°C).
- Season the chicken pieces with salt and pepper.
- Place the cornstarch in one bowl and the beaten eggs in another.
- Dip each piece of chicken into the cornstarch first, then into the egg, coating evenly.
- Heat a large skillet over medium heat with olive oil. Lightly brown the chicken for about 2 minutes on each side (it does not need to be fully cooked).
2. Bake the Chicken:
- Place the browned chicken pieces in a greased 9×13-inch baking dish.
3. Make the Sweet and Sour Sauce:
- In a bowl, whisk together apple cider vinegar, honey (or sweetener), ketchup, soy sauce, garlic powder, and ginger.
- Pour the sauce evenly over the chicken in the baking dish.
4. Bake:
- Bake the chicken uncovered for 45-50 minutes.
- Stir the chicken every 15 minutes to coat it well with the sauce.
