Rich Banana Bread
Ingredients:
- 3 medium ripe bananas (mashed)
- 2 large eggs (room temperature)
- 1/3 cup unsalted butter (melted)
- 1/4 cup heavy cream
- 1 tsp vanilla extract
- 2 cups almond flour
- 1/2 cup erythritol (or your preferred keto sweetener)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup chopped walnuts (optional)
- 1/4 cup sugar-free dark chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together mashed bananas, eggs, melted butter, heavy cream, and vanilla extract until smooth.
- In a separate bowl, combine almond flour, erythritol, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- If using, fold in chopped walnuts and chocolate chips.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Tips:
- For a more intense flavor, toast the walnuts before adding them to the batter.
- Store leftovers in an airtight container for up to 5 days or freeze for longer storage.
