Rich Banana Bread

Ingredients:

  • 3 medium ripe bananas (mashed)
  • 2 large eggs (room temperature)
  • 1/3 cup unsalted butter (melted)
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1/2 cup erythritol (or your preferred keto sweetener)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup sugar-free dark chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together mashed bananas, eggs, melted butter, heavy cream, and vanilla extract until smooth.
  3. In a separate bowl, combine almond flour, erythritol, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  5. If using, fold in chopped walnuts and chocolate chips.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Tips:

  • For a more intense flavor, toast the walnuts before adding them to the batter.
  • Store leftovers in an airtight container for up to 5 days or freeze for longer storage.
