Baked Sweet Potato Fries with Chipotle Mayo
Ingredients:
For the Sweet Potato Fries:
2 large sweet potatoes, peeled and cut into thick fries
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Chipotle Mayo:
1/4 cup SF mayonnaise
1 tablespoon adobo sauce from canned chipotle peppers in adobo
1/2 teaspoon lime juice
1/4 teaspoon garlic powder
1/8 teaspoon cumin
1/8 teaspoon smoked paprika
Instructions:
Preheat oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare Sweet Potatoes: Toss sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper. Spread in a single layer on the baking sheet.
Bake: Bake for 20-25 minutes, or until golden brown and crispy. Flip the fries halfway through baking.
Make Chipotle Mayo: In a small bowl, whisk together mayonnaise, adobo sauce, lime juice, garlic powder, cumin, and smoked paprika.
Serve: Serve hot sweet potato fries with Chipotle Mayo dipping sauce.
