Fettuccine Mushroom Stroganoff
Ingredients
Olive oil
1 onion diced
500gs mushrooms sliced
4-5 garlic cloves crushed
1 1/2 cups low salt veg stock
1 tsp djon mustard
1 tsp sweet Hungarian paprika
3 tbsp flour
3 tbsp tamari or soy sauce
1 400ml can coconut milk
2 tbsp nutritional yeast
A spoonful of tomato paste or sauce
Little squeeze of lemon at the end
Salt and pepper.
Fry the onion for 5 mins, throw in the mushrooms and garlic cook for another 5 -10 or so. Whisk together the stock, flour, tamari,djon, paprika, and then pour into pan. Wait for it to thicken then add in the coconut milk and simmer till flavour come together and thicken. Add in the nutritional yeast , taste test then add in the tomato paste or sauce if needed. Season with salt and pepper to taste and add a little squeeze of lemon to give it a lift if its too rich, serve with pasta or rice and parsley
