3 Smartpoints Oat Banana Blueberry Muffins
Ingredients:
- 1 ripe banana, mashed
- 1/2 cup rolled oats
- 1/2 cup unsweetened applesauce
- 1/2 cup blueberries (fresh or frozen)
- 1/4 cup almond milk (or any milk of choice)
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 tbsp honey or maple syrup (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- Mash the banana in a large bowl until smooth. Add the applesauce, almond milk, egg, vanilla extract, and honey (if using). Mix well.
- In a separate bowl, combine the dry ingredients: rolled oats, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in the blueberries.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool for a few minutes before transferring them to a wire rack.
