Crunchy Broccoli Apple Salad
Ingredients:
- 1 large head of broccoli (cut into small florets)
- 2 medium apples (diced, preferably red apples like Gala or Fuji)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup sunflower seeds or slivered almonds (for crunch)
- 1/4 cup dried cranberries (optional for sweetness)
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup Greek yogurt (for the dressing)
- 1/4 cup mayonnaise (or light mayo)
- 1-2 tbsp apple cider vinegar or lemon juice
- 1 tbsp honey (optional for sweetness)
- Salt and pepper to taste
Instructions:
- Prepare the Salad:
- In a large bowl, combine the broccoli florets, diced apples, red onion, and sunflower seeds (or almonds). Toss everything together until evenly distributed.
- Make the Dressing:
- In a separate bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar (or lemon juice), and honey. Season with salt and pepper to taste.
- Combine:
- Pour the dressing over the salad and toss everything until the broccoli and apples are well coated. If you’re using shredded cheddar cheese or dried cranberries, add them now and give it one final mix.
- Serve:
- Serve immediately for a fresh, crunchy texture, or refrigerate for 30 minutes for a more chilled salad. It’s a great dish for lunch, a side, or a healthy snack!
