Lightened-Up Cheesy Ranch Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 packet ranch seasoning mix (or homemade ranch seasoning)
- 1 cup shredded reduced-fat cheddar cheese
- 1/2 cup plain Greek yogurt (for creaminess)
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Prepare the chicken: Season the chicken breasts with salt, pepper, and garlic powder on both sides.
- Sear the chicken: Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until golden brown. This step is optional but adds extra flavor.
- Prepare the ranch sauce: In a small bowl, mix the ranch seasoning with Greek yogurt and Parmesan cheese to form a creamy ranch sauce. Stir in a tablespoon of water if needed to get the desired consistency.
- Top with cheese: Place the seared chicken breasts in a baking dish. Spread the ranch sauce evenly over each piece of chicken, then top with shredded cheddar cheese.
- Bake the chicken: Place the dish in the oven and bake for 20-25 minutes or until the chicken is fully cooked and the cheese is melted and bubbly.
- Garnish and serve: Remove from the oven and garnish with chopped fresh parsley if desired.
