Black Bean Tacos
Ingredients:
1 Tablespoon olive oil
3 onions-sliced or more depending on taste
1 (28-ounce) can black beans, rinsed and drained
3-4 gloves of garlic, chopped
½ teaspoon chili powder
½ teaspoon – 1 teaspoon turmeric
½ teaspoon ground cumin
taco shells
Optional Toppings:
salsa
hot sauce
grated cheese (your choice)
tomato-diced
lettuce -shredded
avocado-sliced��
Directions
Heat olive oil in a frying pan over medium-low heat; cook onion in hot oil until tender, and brown. I like to caramelize the onions. Stir black beans, garlic, chili powder, turmeric and cumin with the onion. Reduce heat to low and cook the mixture at a simmer for 5 to 10 minutes.
Serve with taco shells and add whatever toppings you like.
