Weight Watchers 1-Point Chocolate Chip Cookies
Ingredients:
1 cup almond flour (for a lower-carb option)
1/4 cup granulated sweetener (such as Stevia, Monk Fruit, or Swerve, to reduce sugar)
1/4 cup unsweetened applesauce (to replace butter or oil for a lighter texture)
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1/4 cup sugar-free chocolate chips (or regular chocolate chips if preferred)
1 tbsp water (optional, to adjust dough consistency)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
Prepare the Cookie Dough:
In a medium-sized mixing bowl, combine the almond flour, sweetener, baking soda, and salt.
Add the applesauce, egg, and vanilla extract to the dry ingredients and mix until smooth and well-combined. If the dough seems too dry, add a tablespoon of water to achieve the right consistency.
Gently fold in the sugar-free chocolate chips (or regular chocolate chips if using).
Shape the Cookies:
Use a tablespoon or a small cookie scoop to form dough balls. Place them onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Flatten each dough ball slightly with your fingers or the back of a spoon to help them spread evenly as they bake.
Bake the Cookies:
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Keep an eye on them, as baking times may vary slightly depending on your oven.
Once done, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
