Home Made Creamy Cucumber Salad
Ingredients:
- 2 medium cucumbers, thinly sliced
- 1/2 small red onion, thinly sliced (optional)
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 1 tbsp white vinegar
- 1 tsp Dijon mustard (optional)
- 1 tbsp fresh dill (or 1 tsp dried dill)
- Salt and pepper, to taste
- 1 tsp sugar (optional, for a slight sweetness)
- 1/4 tsp garlic powder (optional)
Instructions:
- Prepare the cucumbers: Peel the cucumbers (if desired) and slice them thinly. You can also sprinkle some salt on them and let them sit for 5–10 minutes to release excess water, then blot them dry with paper towels.
- Make the dressing: In a medium-sized bowl, whisk together the sour cream, mayonnaise, white vinegar, Dijon mustard (if using), dill, garlic powder, sugar (if using), and salt and pepper to taste.
- Combine: Add the cucumber slices and onions (if using) into the bowl with the dressing. Toss everything gently to coat the cucumbers evenly in the creamy dressing.
- Chill: For best flavor, let the salad sit in the fridge for at least 30 minutes before serving. This allows the flavors to meld together.
- Serve: Serve chilled as a refreshing side dish with your meal.
