Pecan Pie Bar

Ingredients

For the Crust:

  • 2 cups almond flour
  • 1/3 cup unsalted butter (melted)
  • 1/4 cup powdered erythritol or monk fruit sweetener
  • 1 tsp vanilla extract

For the Pecan Filling:

  • 2 large eggs
  • 3/4 cup brown sugar substitute (like Swerve Brown or Lakanto)
  • 1/3 cup unsalted butter (melted)
  • 1 tbsp heavy cream
  • 1 tsp vanilla extract
  • 1 1/2 cups chopped pecans

Instructions

Step 1: Make the Crust

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted butter, powdered sweetener, and vanilla extract. Stir until well combined.
  3. Press the mixture evenly into an 8×8-inch baking dish lined with parchment paper.
  4. Bake for 10-12 minutes or until the edges are lightly golden. Set aside to cool.

Step 2: Prepare the Pecan Filling

  1. In a large bowl, whisk together eggs, brown sugar substitute, melted butter, heavy cream, and vanilla extract until smooth.
  2. Stir in chopped pecans until evenly distributed.

Step 3: Assemble and Bake

  1. Pour the pecan mixture over the cooled crust, spreading it evenly.
  2. Bake for 30-35 minutes or until the filling is set and the top is golden brown.
  3. Let it cool completely before slicing into bars.

Tips

  • Store in an airtight container for up to 5 days or refrigerate for longer freshness.
  • You can freeze the bars for future treats!
