Air Fryer Blueberry Muffins
Ingredients:
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 large egg
- ½ cup milk
- ⅓ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
- Optional: coarse sugar for topping
Instructions:
- Prepare the Air Fryer:
- Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
- Line silicone muffin cups or ramekins with paper liners, or grease them lightly.
- Mix the Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Combine the Wet Ingredients:
- In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.
- Make the Batter:
- Gradually add the wet ingredients to the dry ingredients. Mix until just combined (do not overmix).
- Gently fold in the blueberries.
- Fill the Muffin Cups:
- Spoon the batter into the prepared cups, filling each about ¾ full.
- Sprinkle coarse sugar on top for added texture, if desired.
- Air Fry:
- Place the muffin cups in the air fryer basket, ensuring they do not touch.
- Air fry at 320°F (160°C) for 10–15 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve:
- Let the muffins cool in the basket for 5 minutes, then transfer them to a wire rack to cool completely.
