Air Fryer Blueberry Muffins

Ingredients:

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 large egg
  • ½ cup milk
  • ⅓ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • Optional: coarse sugar for topping

Instructions:

  1. Prepare the Air Fryer:
    • Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
    • Line silicone muffin cups or ramekins with paper liners, or grease them lightly.
  2. Mix the Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine the Wet Ingredients:
    • In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.
  4. Make the Batter:
    • Gradually add the wet ingredients to the dry ingredients. Mix until just combined (do not overmix).
    • Gently fold in the blueberries.
  5. Fill the Muffin Cups:
    • Spoon the batter into the prepared cups, filling each about ¾ full.
    • Sprinkle coarse sugar on top for added texture, if desired.
  6. Air Fry:
    • Place the muffin cups in the air fryer basket, ensuring they do not touch.
    • Air fry at 320°F (160°C) for 10–15 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and Serve:
    • Let the muffins cool in the basket for 5 minutes, then transfer them to a wire rack to cool completely.
