Air fryer Giant Zucchini Parmesan
Ingredients:
- 1 large zucchini (sliced lengthwise into ½-inch thick slabs)
- 1 cup breadcrumbs (Panko or Italian-seasoned)
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 eggs (beaten)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Olive oil spray
- Salt and pepper to taste
Instructions:
- Prepare the Zucchini:
- Lightly sprinkle the zucchini slices with salt. Let them sit for 10 minutes to draw out excess moisture, then pat them dry with a paper towel.
- Set Up Coating Station:
- Mix breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning in one bowl.
- Beat eggs in another bowl.
- Bread the Zucchini:
- Dip each zucchini slice into the beaten eggs, then coat with the breadcrumb mixture. Press gently to ensure an even coating.
- Air Fry:
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
- Arrange the zucchini slices in a single layer in the air fryer basket. Spray lightly with olive oil.
- Cook for 8-10 minutes, flipping halfway, until golden and crispy.
- Add Sauce and Cheese:
- Spoon a layer of marinara sauce over each zucchini slice, then sprinkle with shredded mozzarella.
- Air fry for another 2-3 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the air fryer and garnish with extra Parmesan and fresh basil, if desired. Serve warm.
