Air Fryer Muffin Coffee Cake

Ingredients:

For the Muffins:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup milk (or almond milk)
  • 1 large egg
  • ¼ cup melted butter or vegetable oil
  • 1 tsp vanilla extract

For the Crumb Topping:

  • ⅓ cup all-purpose flour
  • ⅓ cup brown sugar
  • ½ tsp cinnamon
  • 3 tbsp cold butter, cubed

Optional Glaze:

  • ½ cup powdered sugar
  • 1-2 tbsp milk or cream
  • ¼ tsp vanilla extract

Instructions:

  1. Prepare the Topping:
    • In a small bowl, mix the flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Set aside.
  2. Make the Muffin Batter:
    • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In a separate bowl, combine the milk, egg, melted butter, and vanilla. Add the wet ingredients to the dry ingredients and stir until just combined. Avoid overmixing.
  3. Assemble the Muffins:
    • Line the air fryer basket with silicone muffin liners or parchment paper muffin cups.
    • Fill each liner about halfway with the batter. Sprinkle the crumb topping generously over each muffin.
  4. Cook in the Air Fryer:
    • Preheat the air fryer to 330°F (165°C) for 3 minutes.
    • Place the muffins in the air fryer basket, leaving space between them for air circulation.
    • Air fry for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  5. Optional Glaze:
    • Mix powdered sugar, milk, and vanilla until smooth. Drizzle over the muffins once they have cooled slightly.
