Air fryer Crispy Cheesy Potato Fritters
Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup green onions, finely chopped
- 1 egg, lightly beaten
- 1/4 cup breadcrumbs (plus more for coating)
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- Salt and pepper to taste
- Cooking spray
Instructions:
- Prepare the mixture:
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, egg, breadcrumbs, garlic powder, paprika, salt, and pepper. Mix well until everything is combined.
- Shape the fritters:
- Scoop about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.
- Coat with breadcrumbs:
- Roll each patty in breadcrumbs to create a crispy coating.
- Preheat the air fryer:
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Cook the fritters:
- Lightly spray the air fryer basket with cooking spray. Arrange the fritters in a single layer, leaving space between them.
- Spray the tops of the fritters lightly with cooking spray to help them crisp up.
- Cook at 375°F (190°C) for 10–12 minutes, flipping halfway through, until golden brown and crispy.
- Serve:
- Serve the fritters hot with your favorite dipping sauce, like sour cream, ranch, or ketchup.
