Air fryer Sausage Breakfast Muffins
Ingredients:
- 1 cup cooked sausage crumbles
- 6 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced bell peppers (optional)
- 1/4 cup diced onions (optional)
- Salt and pepper to taste
- Non-stick cooking spray
Instructions:
- Prepare the Filling:
- In a mixing bowl, combine the cooked sausage, cheddar cheese, diced bell peppers, and onions (if using). Mix well.
- Prepare the Egg Mixture:
- In another bowl, whisk the eggs, milk, salt, and pepper until well combined.
- Assemble the Muffins:
- Spray silicone muffin cups with non-stick cooking spray.
- Divide the sausage mixture evenly among the cups.
- Pour the egg mixture into each cup, filling about 3/4 of the way.
- Preheat and Cook:
- Preheat the air fryer to 350°F (175°C) for 3 minutes.
- Place the muffin cups in the air fryer basket. Cook for 10–12 minutes, or until the eggs are set and lightly golden on top.
- Cool and Serve:
- Let the muffins cool slightly before removing them from the silicone cups.
- Serve warm, or store in the fridge for a quick breakfast option later.
