Air Fryer Chicken Stuffed Baked Avocados
Ingredients:
- 2 ripe avocados, halved and pitted
- 1 cup cooked chicken, shredded
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup shredded cheddar cheese (plus extra for topping)
- 1/4 cup diced tomatoes
- 2 tablespoons chopped green onions
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Optional: Hot sauce or salsa for topping
Instructions:
- Prepare the Filling:
- In a bowl, mix the shredded chicken, sour cream (or Greek yogurt), shredded cheddar cheese, diced tomatoes, green onions, garlic powder, smoked paprika, salt, and pepper. Adjust seasoning to taste.
- Prepare the Avocado Halves:
- Scoop out a small portion of the avocado flesh from each half to create a larger cavity for stuffing. Dice the removed flesh and mix it into the chicken filling.
- Stuff the Avocados:
- Fill each avocado half with the prepared chicken mixture. Press gently to ensure the filling stays in place.
- Top with Cheese:
- Sprinkle additional shredded cheddar cheese over the stuffed avocados.
- Air Fry:
- Preheat the air fryer to 375°F (190°C).
- Place the stuffed avocados in the air fryer basket. If needed, use foil to create a stable base for the avocados to prevent tipping.
- Air fry for 5–7 minutes, or until the cheese is melted and slightly golden.
- Serve:
- Carefully remove the avocados from the air fryer and let them cool slightly.
- Top with hot sauce, salsa, or additional green onions if desired.
