Air Fryer Egg Muffins
Ingredients:
- 6 large eggs
- 1/4 cup milk (optional for creaminess)
- 1/4 cup diced bell peppers
- 1/4 cup cooked, crumbled bacon or sausage (optional)
- 1/4 cup shredded cheddar cheese (or your favorite cheese)
- 1/4 cup chopped spinach or kale
- Salt and pepper to taste
- Nonstick cooking spray
Instructions:
- Preheat the Air Fryer: Set the air fryer to 325°F (160°C).
- Prepare the Muffin Cups: Lightly spray silicone muffin cups with nonstick cooking spray.
- Mix the Eggs: In a medium bowl, whisk together the eggs, milk, salt, and pepper.
- Add Fillings: Divide the bell peppers, bacon or sausage, cheese, and spinach evenly among the muffin cups.
- Pour Egg Mixture: Carefully pour the egg mixture into each muffin cup, filling them about 3/4 full.
- Cook in the Air Fryer: Place the muffin cups in the air fryer basket, ensuring they are spaced apart for even cooking. Air fry for 10-12 minutes, or until the eggs are set and slightly golden on top.
- Cool and Serve: Let the egg muffins cool for a couple of minutes before removing them from the silicone cups.
Tips:
- Customize the fillings with your favorite ingredients, such as diced onions, mushrooms, or tomatoes.
- These can be made ahead and stored in the refrigerator for up to 3 days or frozen for longer. Reheat in the air fryer or microwave.
