Air fryer German Potato Pancakes

Ingredients:

  • 4 medium potatoes, peeled and grated
  • 1 small onion, finely grated
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • Oil spray for the air fryer basket

Instructions:

  1. Prep the Potatoes and Onion:
    • Grate the potatoes and onion into a bowl. Use a clean kitchen towel to squeeze out as much liquid as possible.
  2. Make the Batter:
    • In a mixing bowl, combine the grated potatoes, onion, eggs, flour, baking powder, salt, pepper, and nutmeg (if using). Mix well until all ingredients are incorporated.
  3. Shape the Pancakes:
    • Form the mixture into small, flat patties (about 3 inches in diameter).
  4. Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  5. Cook the Pancakes:
    • Lightly spray the air fryer basket with oil. Place the potato pancakes in a single layer, leaving space between each.
    • Spray the tops of the pancakes with a bit of oil to help them crisp up.
    • Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy on both sides.
  6. Serve:
    • Serve hot with applesauce, sour cream, or your favorite dipping sauce.
