Air fryer German Potato Pancakes
Ingredients:
- 4 medium potatoes, peeled and grated
- 1 small onion, finely grated
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- Oil spray for the air fryer basket
Instructions:
- Prep the Potatoes and Onion:
- Grate the potatoes and onion into a bowl. Use a clean kitchen towel to squeeze out as much liquid as possible.
- Make the Batter:
- In a mixing bowl, combine the grated potatoes, onion, eggs, flour, baking powder, salt, pepper, and nutmeg (if using). Mix well until all ingredients are incorporated.
- Shape the Pancakes:
- Form the mixture into small, flat patties (about 3 inches in diameter).
- Preheat the Air Fryer:
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
- Cook the Pancakes:
- Lightly spray the air fryer basket with oil. Place the potato pancakes in a single layer, leaving space between each.
- Spray the tops of the pancakes with a bit of oil to help them crisp up.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy on both sides.
- Serve:
- Serve hot with applesauce, sour cream, or your favorite dipping sauce.
