Air Fryer Lemon Herb Potatoes

Ingredients:

  • 1.5 lbs baby potatoes (halved)
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp paprika (optional)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Prepare the Potatoes:
    • Wash and halve the baby potatoes. Pat them dry with a paper towel to remove excess moisture.
  2. Season the Potatoes:
    • In a large bowl, mix olive oil, lemon juice, lemon zest, garlic powder, thyme, rosemary, oregano, paprika (if using), salt, and pepper. Toss the potatoes in the mixture until evenly coated.
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for about 3 minutes.
  4. Cook the Potatoes:
    • Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 15–20 minutes, shaking the basket halfway through to ensure even cooking.
  5. Check for Doneness:
    • The potatoes should be golden brown and fork-tender. If needed, cook for an additional 2–3 minutes.
  6. Serve:
    • Garnish with fresh parsley and serve warm as a side dish.
