Air Fryer Lemon Herb Potatoes
Ingredients:
- 1.5 lbs baby potatoes (halved)
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp paprika (optional)
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions:
- Prepare the Potatoes:
- Wash and halve the baby potatoes. Pat them dry with a paper towel to remove excess moisture.
- Season the Potatoes:
- In a large bowl, mix olive oil, lemon juice, lemon zest, garlic powder, thyme, rosemary, oregano, paprika (if using), salt, and pepper. Toss the potatoes in the mixture until evenly coated.
- Preheat the Air Fryer:
- Preheat your air fryer to 375°F (190°C) for about 3 minutes.
- Cook the Potatoes:
- Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 15–20 minutes, shaking the basket halfway through to ensure even cooking.
- Check for Doneness:
- The potatoes should be golden brown and fork-tender. If needed, cook for an additional 2–3 minutes.
- Serve:
- Garnish with fresh parsley and serve warm as a side dish.
