Slow Cooker Cheddar Corn with Bacon
Ingredients:
- 4 cups frozen corn kernels
- 4 slices of turkey bacon, chopped (or regular bacon if preferred)
- 1 cup reduced-fat sharp cheddar cheese, shredded
- 1/4 cup reduced-fat cream cheese, softened
- 1/4 cup skim milk
- 1 tablespoon light butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon fresh parsley (optional, for garnish)
Instructions:
- Prepare Bacon:
- In a skillet over medium heat, cook the chopped turkey bacon until crispy, about 5-7 minutes. Drain excess fat on a paper towel and set aside.
- Combine Ingredients:
- In the slow cooker, add the frozen corn, cooked bacon, shredded cheddar cheese, softened cream cheese, skim milk, light butter, garlic powder, and onion powder.
- Cook:
- Stir everything together until evenly mixed. Cover and cook on low for 3-4 hours, or until the corn is tender and the cheese has melted completely.
- Season and Serve:
- After cooking, taste and season with salt and pepper to your liking. If desired, sprinkle with fresh parsley for a pop of color.
