Ropical Pineapple Paradise Pie
Ingredients:
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup sugar
For the Filling:
1 can (20 oz) crushed pineapple, drained
1 package (8 oz) cream cheese, softened
1 can (14 oz) sweetened condensed milk
1 cup whipped cream
½ cup shredded coconut
2 tbsp lemon juice
For Topping:
1 cup whipped cream
¼ cup toasted coconut flakes (optional)
Instructions:
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch pie pan. Refrigerate while preparing the filling.
In a mixing bowl, beat the cream cheese until smooth. Add sweetened condensed milk and lemon juice, and mix until well combined.
