Delicious Rock Cakes in the Air fryer

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon (optional)
  • ¼ tsp salt
  • ½ cup unsalted butter, chilled and cubed
  • ½ cup granulated sugar
  • ½ cup mixed dried fruit (raisins, sultanas, cherries, etc.)
  • 1 large egg
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, sift together flour, baking powder, cinnamon (if using), and salt.
    • Rub the cubed butter into the flour mixture with your fingers until it resembles breadcrumbs.
    • Stir in the sugar and dried fruit.
  2. Mix Wet Ingredients:
    • In a small bowl, whisk the egg, milk, and vanilla extract together.
    • Gradually add the wet mixture into the dry ingredients, stirring gently until a slightly sticky dough forms.
  3. Shape the Rock Cakes:
    • Scoop small portions of dough (about 2 tbsp each) and roughly shape them into mounds. They should look craggy and uneven, like “rocks.”
  4. Preheat Air Fryer:
    • Preheat your air fryer to 320°F (160°C) for about 3 minutes.
  5. Cook the Rock Cakes:
    • Place parchment paper in the air fryer basket and arrange the dough mounds on top, leaving space between them.
    • Air fry at 320°F (160°C) for 10-12 minutes or until golden brown.
  6. Cool and Serve:
    • Remove the rock cakes from the air fryer and let them cool on a wire rack.
    • Serve plain or with a sprinkle of powdered sugar.
