Delicious Rock Cakes in the Air fryer
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp ground cinnamon (optional)
- ¼ tsp salt
- ½ cup unsalted butter, chilled and cubed
- ½ cup granulated sugar
- ½ cup mixed dried fruit (raisins, sultanas, cherries, etc.)
- 1 large egg
- 2 tbsp milk
- 1 tsp vanilla extract

Instructions:
- Prepare the Dough:
- In a mixing bowl, sift together flour, baking powder, cinnamon (if using), and salt.
- Rub the cubed butter into the flour mixture with your fingers until it resembles breadcrumbs.
- Stir in the sugar and dried fruit.
- Mix Wet Ingredients:
- In a small bowl, whisk the egg, milk, and vanilla extract together.
- Gradually add the wet mixture into the dry ingredients, stirring gently until a slightly sticky dough forms.
- Shape the Rock Cakes:
- Scoop small portions of dough (about 2 tbsp each) and roughly shape them into mounds. They should look craggy and uneven, like “rocks.”
- Preheat Air Fryer:
- Preheat your air fryer to 320°F (160°C) for about 3 minutes.
- Cook the Rock Cakes:
- Place parchment paper in the air fryer basket and arrange the dough mounds on top, leaving space between them.
- Air fry at 320°F (160°C) for 10-12 minutes or until golden brown.
- Cool and Serve:
- Remove the rock cakes from the air fryer and let them cool on a wire rack.
- Serve plain or with a sprinkle of powdered sugar.
